Shortcake Parfait Trifle

This Shortcake Parfait Trifle is a layered strawberry shortcake-style dessert with juicy berries, vanilla cream, and cubes of tender pound cake. It’s cool, creamy, and the kind of dessert I like when I want something a little more special than a bowl of berries and whipped cream.

My take uses a cream cheese whipped filling that holds its shape and tastes like a light cheesecake, plus strawberries that get nice and syrupy as they sit. I also like that you can spoon it into a big trifle bowl or make it in individual cups if you want cleaner servings.

I make this most in warm weather when strawberries are good, and it’s especially nice for cookouts and holidays because it’s a make-ahead dessert that looks pretty on the table. A little fresh mint on top is optional, but I think it makes it feel finished.

Why You’ll Love This Recipe

No-bake: There’s no oven time here, which is exactly what I want when it’s hot out or I’m short on time.

Make-ahead friendly: It actually gets better after a few hours in the fridge, once the cake soaks up some strawberry juice and the layers settle.

Real strawberry flavor: Macerated berries taste fresh and bright, and you get that sweet-tart syrup that makes the whole trifle taste like strawberry shortcake.

Filling that holds up: The cream layer is stable and scoopable, not the kind that melts into the berries the second it sits out.

Easy to customize: Use mixed berries, add blueberries for a red-white-and-blue version, or swap the cake style based on what you have.

Ingredients You’ll Need

Strawberry Layer

  • Strawberries: Fresh is best here. I like ripe berries that still have a little firmness so they don’t turn to mush after sitting.
  • Granulated sugar: This helps the berries release their juice and makes that syrupy layer that soaks into the cake.
  • Lemon juice: Don’t skip it. It keeps the strawberries tasting bright instead of flat and extra sweet.
  • Vanilla extract: A small amount makes the berries taste more like classic shortcake.
  • Salt: Just a pinch, but it helps the berry flavor pop.

Cream Layer

  • Cream cheese: I use full-fat and make sure it’s truly softened so the filling stays smooth with no little lumps.

  • Heavy whipping cream: Cold cream whips up faster and holds better. This is what makes the filling light instead of dense.
  • Powdered sugar: It dissolves easily, so you don’t get any grittiness in the cream layer.
  • Vanilla extract: This is the main flavor in the filling, so use the good stuff if you can.
  • Sour cream: Adds a little tang and keeps the filling from tasting one-note sweet. Greek yogurt can work in a pinch, but sour cream is my preference.

Cake and Garnish

  • Pound cake: Store-bought is totally fine here. If it’s very soft, I’ll toast the cubes briefly so they hold their shape in the layers.
  • Strawberry jam: Optional, but nice if your berries aren’t super sweet or you want a more “strawberry shortcake” taste.
  • Fresh mint: Also optional, but it looks good and adds a clean, fresh note on top.

Recipe Instructions

  1. Mix the strawberries: Toss the sliced strawberries with granulated sugar, lemon juice, vanilla, and a pinch of salt. Let them sit for about 15 minutes, then stir again so the juices release and turn syrupy.
  2. Beat the cream cheese: Beat the softened cream cheese with the powdered sugar and vanilla until smooth and creamy, scraping the bowl as needed.
  3. Add the sour cream: Mix in the sour cream just until combined, then set the bowl aside.
  4. Whip the cream: In a separate bowl, whip the cold heavy cream to medium-stiff peaks. Stop when it holds its shape but still looks creamy, not dry.
  5. Fold the filling: Fold the whipped cream into the cream cheese mixture until the filling is light and pipeable. Take your time so you don’t knock all the air out.
  6. Start the layers: Add one-third of the pound cake cubes to a trifle bowl (or divide between 8 cups). Spoon a little strawberry juice over the cake, then spread a thin layer of jam if you’re using it.
  7. Add berries and cream: Add one-third of the strawberries, then one-third of the cream mixture.

  8. Repeat: Repeat the layers two more times, ending with the cream layer. Spoon the remaining strawberries on top.
  9. Chill: Cover and refrigerate for at least 2 hours before serving so the layers set up and the cake softens into the berry juices.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Let the strawberries sit long enough. That short rest is what gives you the syrup that makes the cake layer taste like strawberry shortcake. If your berries are a little under-ripe, give them a few extra minutes.

Soften the cream cheese fully. If it’s still cool in the middle, you’ll fight little lumps and it won’t smooth out later. I usually leave it out until it’s easy to press with a finger.

Whip to medium-stiff peaks. If you stop too early, the filling can feel loose. If you go too far, the whipped cream looks grainy and the filling gets heavier.

Toast the cake if it’s very soft. A quick toast helps the cubes hold their shape once the strawberry juice hits them. You don’t need to dry it out completely, just firm it up a bit.

Use jam as a thin layer. A little goes a long way. Too much jam can make the trifle taste overly sweet and sticky.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Extra berries: Put a small bowl of sliced strawberries on the table so people can add more on top. This is especially nice if you’re serving it in individual cups.
  • Mint or lemon zest: A little mint on top is classic, but lemon zest is great too. I like lemon when the berries are very sweet.
  • Shortbread cookies: Serve a cookie on the side for something crisp with the creamy layers. Plain butter shortbread is my favorite with this.
  • Cold drinks: I usually serve this with iced coffee, lemonade, or unsweetened iced tea. Anything light and cold works well.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store leftovers covered in the fridge for up to 3 days. The cake will keep softening as it sits, but it’s still very good for a couple of days.

You can make this recipe ahead and let it chill overnight. For me, the sweet spot is a few hours to overnight, when the layers are set but the cake still has a little structure.

If you want cleaner layers, you can prep the strawberries and the cream mixture earlier in the day, then assemble closer to serving. Keep the components covered in the fridge until you’re ready.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

Can I use mascarpone instead of cream cheese?

Yes. Mascarpone makes a slightly richer, smoother filling, and it tends to set up a bit firmer. Use it the same way you would the cream cheese in this recipe.

Can I use frozen strawberries?

You can, but the texture will be softer and the trifle will end up juicier. If you use frozen berries, thaw them first and expect the layers to look a little less defined.

What can I use instead of pound cake?

Angel food cake, sponge cake, or shortcake biscuits all work. I like pound cake because it holds up well and stays tender after chilling.

Can I make this in individual cups?

Yes, and it’s a nice way to serve it for parties. Just divide everything evenly and keep the same layering order.

Does the trifle need the jam?

No. I use jam when the strawberries aren’t super sweet or when I want a stronger strawberry flavor in the cake layer. If your berries are great, you can skip it.
