Spinach Stuffed Mushroom Bake is my casserole-style take on stuffed mushrooms, baked all together in one dish. You still get that classic creamy spinach-and-cheese filling, but it’s easier to serve and a lot less fussy than doing a tray of tiny appetizers.
The flavor is very garlicky, rich, and a little tangy from the cream cheese and sour cream, with mozzarella getting those browned, melty spots on top. I like cremini mushrooms here because they hold up well and don’t taste watery.
This is especially good as a party appetizer that eats like a warm dip, but I also make it as a simple meatless dinner with a salad on the side. It’s the kind of bake I’m happy to put in the middle of the table and let everyone scoop from.

Why You’ll Love This Recipe
One-pan feel: You get the comfort of stuffed mushrooms, but baked together in a casserole dish so it’s simpler to serve and easier to portion.
Really creamy filling: Cream cheese, sour cream, and Parmesan make the spinach mixture thick and spreadable instead of runny.
Good texture on top: Mozzarella gives you those browned spots, and the panko topping is great when you want a little crunch.
Appetizer or light dinner: I serve it with crackers for parties, or with salad and bread when I want it to be the main thing.
Easy to tweak: You can keep it vegetarian, add bacon, swap in Greek yogurt, or throw in artichoke hearts without changing the method.
Ingredients You’ll Need
Mushrooms
- Cremini mushrooms: I like creminis because they’re sturdy and bake up “meaty.” Pick mushrooms that are similar in size so they cook evenly.
- Olive oil: Just enough to help the caps roast and keep everything from sticking. Any regular olive oil works.
- Kosher salt: Salt early so the mushrooms don’t taste flat. If you’re using fine salt, go a little lighter.
- Black pepper: Basic, but it matters here with all the creamy cheese. Freshly ground is nice if you have it.
Spinach Cheese Filling
- Unsalted butter: This is what I use to cook the stems and garlic, and it makes the filling taste a little richer.
- Garlic: Fresh garlic is best here. The jarred kind works, but the flavor is softer.
- Fresh spinach: I like fresh because it cooks down quickly and tastes clean. Frozen spinach works too, just squeeze it really dry so the filling stays thick.
- Cream cheese: This is the base of the filling. Let it soften so it mixes in smoothly without little lumps.
- Sour cream: Gives the filling a little tang and keeps it from feeling too heavy. Greek yogurt is a totally fine swap.
- Parmesan cheese: Use grated Parmesan for a more even mix. It brings that salty, nutty flavor that makes the filling taste “finished.”
- Mozzarella cheese: This is for that stretchy melt on top and a little inside. I like low-moisture shredded mozzarella so it browns better.
- Crushed red pepper flakes (optional): Adds a small bit of heat. If you’re serving kids, I usually leave it out and add hot sauce at the table.
- Lemon juice (optional): A little brightens everything up. I add it when the filling tastes extra rich.
- Fresh parsley (optional): Nice for color and a fresh finish. If you don’t have it, don’t stress.
- Salt and black pepper: Taste the filling before you stuff the mushrooms. The cheeses can vary a lot in saltiness.
Optional Topping
- Panko breadcrumbs: This gives you a crisp top that’s really nice against the creamy filling. Regular breadcrumbs work too, but panko stays crunchier.
- Olive oil: Helps the panko brown instead of staying pale and dry. Just toss it together quickly.

Recipe Instructions
- Preheat the oven: Heat the oven to 400°F and lightly oil a 9 x 13 inch baking dish.
- Prep the mushrooms: Wipe the mushrooms clean, remove the stems, and arrange the caps cavity side up in the baking dish. Chop the stems finely and set them aside.
- Cook the stems: Melt the butter in a skillet over medium heat, then cook the chopped mushroom stems until most of the moisture evaporates.
- Add the garlic: Add the minced garlic and cook just until fragrant.
- Cook the spinach: Add the chopped spinach and cook until wilted and any excess liquid cooks off. Remove from the heat and let it cool for about 3 minutes.
- Mix the filling: Stir in the cream cheese, sour cream, Parmesan, half of the mozzarella, red pepper flakes (if using), lemon juice (if using), parsley (if using), and salt and pepper to taste, until well combined.
- Stuff the mushrooms: Spoon the filling into each mushroom cap and mound it slightly.
- Add the topping: Sprinkle the remaining mozzarella over the mushrooms. If using panko, mix it with the olive oil and sprinkle it over the top.
- Bake: Bake for 20 to 25 minutes, until the mushrooms are tender and the filling is hot and browned in spots.
- Rest and serve: Let the dish rest for 5 minutes, then serve warm.

Some of my tips!
This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.
Recipe Tips & Tricks
Wipe the mushrooms instead of rinsing them. Mushrooms soak up water fast, and that can make the bake watery. A damp paper towel works fine.
Cook off the liquid from the stems and spinach. Take an extra minute here and let the pan dry out a bit. It keeps the filling thick and scoopable instead of soupy.
Pre-bake the caps if your mushrooms are extra juicy. If you know your mushrooms tend to release a lot of liquid, bake the empty caps for about 8 minutes, then drain the dish before stuffing.
Soften the cream cheese. If it’s cold, it won’t mix in well and you’ll be chasing lumps around the skillet. A quick room-temp rest helps a lot.
Go easy on salt until you taste the filling. Parmesan and mozzarella can be salty, and the mushrooms soak up seasoning. I usually season lightly, taste, then adjust.
Make some touches!
There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.
Serving Suggestions
- Crackers or crostini: If you’re serving this as an appetizer, put out crackers, toasted baguette slices, or pita chips. People will scoop the cheesy filling and grab a mushroom or two.
- Simple salad: A chopped romaine salad with cucumber and a basic vinaigrette is what I usually do. Something crisp is nice next to the rich filling.
- Pasta night: This is a really good side for spaghetti and marinara or baked ziti. It eats a little like a creamy veggie “extra” on the table.
- Brunch plate: Add it next to scrambled eggs and fruit, especially if you keep the red pepper flakes out. It fits right in with a brunch spread.
Save it for later
This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.
Storage and Make Ahead
Store leftovers covered in the fridge for up to 4 days. Reheat individual portions in the microwave, or warm the whole dish in the oven until heated through.
You can also make this recipe ahead. Assemble the mushrooms in the baking dish, cover tightly, and refrigerate up to 24 hours before baking.
When baking from cold, you may need to add a few extra minutes to the bake time. I like to keep an eye on the mushrooms and pull it when the caps look tender and the top has some brown spots.
If you want them to last longer, freeze individual portions or freeze the whole baked dish in an airtight container. Thaw in the fridge overnight before reheating.

A few quick answers
This section covers a few extra details that may help before you head to the recipe card.
Recipe FAQs
Can I use frozen spinach instead of fresh?
Yes. Use thawed frozen spinach and squeeze it very dry before adding it to the pan. If it’s still wet, the filling can turn loose.
Can I swap the sour cream for Greek yogurt?
You can. Plain Greek yogurt works well and keeps the tangy flavor. I usually use full-fat so it stays creamy.
How do I keep the mushrooms from getting watery?
Cooking off the moisture from the stems and spinach helps a lot. If your mushrooms are especially juicy, pre-bake the caps for about 8 minutes, then drain the dish before stuffing and baking again.
Can I add bacon or artichokes?
Yes. Cooked crumbled bacon is great stirred into the filling, and chopped artichoke hearts work well too. Just make sure anything you add isn’t too wet.
How do I know when it’s done?
The mushrooms should be tender when you pierce one with a fork, and the filling should be hot with some browning on top. In most ovens it lands right around 20 to 25 minutes.
