Cake Mix Chocolate Bars

Cake Mix Chocolate Bars are my kind of dessert when I want something rich and chocolatey but still simple. They’re thick, fudgy, and a little chewy, with that classic gooey chocolate chip bite.

This version uses a cake mix dough, plus sweetened condensed milk in the middle so the center stays soft. I like the way the edges set up like a brownie, while the middle stays slightly sticky and dense.

These are especially good for cookie trays, potlucks, and weekend baking. I usually cut them small because they’re very chocolate-forward, in the best way.

Why You’ll Love This Recipe

Fast and Easy: Cake mix does a lot of the heavy lifting here, so you get a bar-cookie texture without a long ingredient list.

Fudgy Center: The condensed milk makes the middle extra soft and dense, almost like a cross between brownies and blondies (but chocolate).

Chocolate on Chocolate: Between the chocolate dough and the chips, this one hits the spot when you want a serious chocolate dessert.

Great for Sharing: A 9 x 13 pan makes plenty, and they slice neatly once they’re fully cooled.

Easy to Tweak: Swap the chips, add nuts, or mix in peanut butter chips if that’s more your style.

Ingredients You’ll Need

Chocolate Cake Mix Dough

  • Chocolate cake mix: I use a regular boxed chocolate cake mix here. It gives you a dependable chocolate base and keeps the whole recipe simple.

  • Eggs: These bind everything together so the dough bakes up like a thick, chewy bar instead of a crumbly cake.
  • Unsalted butter: Melted butter makes the dough rich and easy to mix. If you only have salted butter, just go a little lighter on the added salt.
  • Vanilla extract: Don’t skip it. It rounds out the chocolate flavor and makes the bars taste more like a from-scratch cookie bar.
  • Salt: This keeps the bars from tasting flat, especially with all the chocolate and sweetened condensed milk.

Filling and Topping

  • Sweetened condensed milk: This is what makes the center gooey and fudgy. Make sure it’s sweetened condensed milk, not evaporated milk.
  • Semi-sweet chocolate chips: Semisweet is my go-to here, but milk chocolate or dark chocolate chips both work if that’s what you like.
  • Walnuts: Totally optional, but nice if you want a little crunch. Pecans work too, or just leave nuts out altogether.

Recipe Instructions

  1. Preheat the oven: Heat the oven to 350 F and position a rack in the middle.
  2. Prep the pan: Line a 9 x 13 inch pan with parchment paper and lightly grease it.
  3. Mix the dough: Stir the cake mix, eggs, melted butter, vanilla, and salt together until a thick dough forms.
  4. Press the base: Press about two thirds of the dough evenly into the prepared pan.
  5. Add the filling: Sprinkle 1 1/2 cups chocolate chips evenly over the dough, then drizzle the sweetened condensed milk over the chips.
  6. Top it: Sprinkle the remaining chocolate chips over the top and add walnuts if you’re using them.
  7. Add the remaining dough: Drop small pieces of the remaining dough over the top and gently flatten them slightly without fully covering the chips.

  8. Bake: Bake for 25 to 30 minutes, until the edges are set and the center is still slightly soft.
  9. Cool and slice: Cool completely in the pan for clean slices, then lift out and cut into bars. For extra clean cuts, chill for 30 minutes before slicing.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Use parchment paper. A parchment sling makes it much easier to lift the whole thing out, especially since the middle stays soft.

Don’t overmix the dough. Just stir until you don’t see dry cake mix anymore. Overmixing can make the bars a little tougher around the edges.

Pull them when the center looks a little underdone. The edges should look set, but the middle should still look slightly soft. They firm up a lot as they cool.

Let them cool completely before cutting. If you slice too early, the condensed milk layer will smear and you’ll get messy edges. Cooling is what gives you clean, sharp bars.

Chill before slicing if you want neat squares. Even 30 minutes in the fridge helps the chocolate set so the knife doesn’t drag.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Milk: A cold glass of milk is simple and classic with these. I like it best when the bars are cut small and served straight from the pan.
  • Coffee or espresso: These are really good with coffee, especially if you went with dark chocolate chips. It’s a nice way to break up the sweetness.
  • Ice cream: Serve a bar with vanilla ice cream on the side if you want to make it dessert-dessert. A little chocolate sauce on top is great too.
  • Fruit: Fresh strawberries or raspberries are nice next to a rich chocolate bar. It makes the plate feel a little lighter.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store the bars airtight at room temperature for up to 5 days. I keep them in a covered container and separate layers with parchment so the tops don’t stick.

If you like a firmer texture, you can store them in the fridge and cut what you need. They’re also easier to slice cold.

To freeze, wrap individual bars or freeze them in a tight container for up to 2 months. Thaw at room temperature, or thaw in the fridge overnight if you want them extra neat and firm.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

Can I use milk chocolate chips or dark chocolate chips instead?

Yes. Milk chocolate makes the bars sweeter, and dark chocolate makes them a little more intense. I usually stick with semisweet, but all three work.

How do I know when the bars are done baking?

Look for set edges and a center that still looks slightly soft. If you bake until the center looks fully firm, they’ll end up drier once they cool.

Can I add other mix-ins?

Definitely. Peanut butter chips and butterscotch chips both work well, and you can also swap the walnuts for pecans. I’d keep the total amount of add-ins about the same so the bars still slice cleanly.

Why are my bars messy when I cut them?

They probably weren’t cooled long enough. Let them cool completely in the pan, and if you want really clean cuts, chill the slab for 30 minutes before slicing.
