Heath Bar Trifle

Heath Bar Trifle is my favorite kind of no-bake dessert: layers of brownie, chocolate pudding, and a cream cheese whipped layer that tastes like cheesecake filling.

The texture is the whole point here. You get soft brownie cubes, thick pudding, and those crunchy toffee bits that keep it from feeling one-note.

I like serving this as a make-ahead potluck dessert or for holidays when I want something that looks nice in a glass dish but doesn’t take up oven space. It’s also an easy one to scoop and serve when people are grazing.

Why You’ll Love This Recipe

No-bake: No oven time, no water baths, no fuss. It’s just mix, layer, and chill.

Chocolate + toffee: That classic Heath Bar flavor is so good with chocolate pudding and brownies. It tastes like a candy bar dessert in the best way.

Make-ahead friendly: This is one of those desserts that’s better after it sits. The layers settle and slice (or scoop) cleaner.

Easy to serve: You can spoon it into bowls, cups, or small jars. It’s simple and tidy for parties.

Flexible: Homemade brownies are great, but store-bought works just fine here. You can also switch up the pudding flavor if you want.

Ingredients You’ll Need

Base

  • Brownies: I like using a 9×13-inch pan worth, cooled, then cut into small cubes. Box mix, bakery brownies, or homemade all work.
  • Caramel sauce: Optional, but I like a light drizzle for extra candy-bar flavor. The jar kind is perfect.

Pudding Layer

  • Instant chocolate pudding mix: Make sure it’s instant (not cook-and-serve). It sets up fast and stays thick in the layers.

  • Cold milk: Cold is important so the pudding thickens the way it should. Any regular milk works; I usually use 2% or whole.

Cream Layer

  • Cream cheese: Let it soften so it beats smooth with no lumps. Full-fat gives the best texture here.
  • Powdered sugar: Sweetens the cream layer and keeps it smooth. Granulated sugar will feel gritty, so stick with powdered.
  • Vanilla extract: Just enough to make the cream layer taste like a cheesecake filling instead of plain sweet cream.
  • Whipped topping or sweetened whipped cream: Whipped topping holds up really well for a trifle. If you’re using homemade whipped cream, make sure it’s nicely whipped so the layer stays fluffy.

Topping

  • Toffee bits or Heath bars: Toffee bits are easy and consistent, but crushed Heath bars taste great too. I like a mix of small crumbs and a few bigger pieces.
  • Chocolate syrup: Optional, but a drizzle on top makes it look finished and adds a little extra chocolate.

Recipe Instructions

  1. Whisk the pudding: Whisk the instant chocolate pudding mix with cold milk for about 2 minutes, until thickened. Refrigerate for 5 minutes so it sets up a bit more.
  2. Mix the cream layer: Beat the softened cream cheese with powdered sugar and vanilla until smooth. Fold in the whipped topping (or sweetened whipped cream) until fully combined.
  3. Crush the candy: If you’re using Heath bars, crush them into small pieces. I like some fine crumbs plus a few chunkier bits for texture.
  4. Layer the brownies: Add a layer of brownie cubes to a 3 to 4 quart trifle bowl or deep glass dish, covering the bottom.
  5. Add pudding: Spread a layer of chocolate pudding over the brownies. An offset spatula helps, but a spoon works too.
  6. Add cream and toffee: Spread a layer of the cream mixture, then sprinkle toffee bits over the top.
  7. Repeat the layers: Keep layering brownies, pudding, cream, and toffee until you’ve used everything up, ending with cream and toffee on top. Drizzle caramel sauce or chocolate syrup over the top if you want.

  8. Chill: Cover and refrigerate at least 4 hours, or overnight for the best texture.
  9. Serve: Spoon into bowls or dessert cups and serve cold.

Some of my tips!

This is the part that really makes a difference. If you only read one section, make it this one because this is where I share the little trick that helps the recipe turn out so well.

Recipe Tips & Tricks

Use fully cooled brownies. Warm brownies will melt the pudding and make the layers slide around. Cool them completely, then cut into small cubes so the trifle scoops easily.

Beat the cream cheese until it’s really smooth. If it’s still a little cold, it’ll stay lumpy and you’ll chase it forever with the mixer. Softened cream cheese makes the cream layer quick and easy.

Don’t over-whisk the pudding. Two minutes is plenty, and it will keep thickening as it sits. If it’s too thick, it’s harder to spread without disturbing the brownie layer.

Go lighter on syrup in the middle layers. A little drizzle is nice, but too much caramel or chocolate syrup can make the bottom layers soupy. I usually save most of it for the top.

Add the top toffee right before serving if you want crunch. The toffee softens as it sits in the fridge. It still tastes great, but fresh toffee on top gives you that crisp bite.

Make some touches!

There are plenty of easy ways to serve this depending on the occasion. Keep it simple, or add a few small touches to make it feel a little more special.

Serving Suggestions

  • Mini cups: Spoon it into small clear cups for parties so people can grab one without digging into the trifle bowl. Add a pinch of toffee on top right before serving.
  • Hot coffee: This is really good with coffee, especially after dinner. I usually do plain black coffee or a latte.
  • Cold milk: A cold glass of milk is classic with brownie desserts. It keeps it simple and cuts the richness a bit.
  • Fresh berries: Strawberries or raspberries on the side are nice if you want something fresh on the plate. I don’t mix them into the trifle, just serve alongside.

Save it for later

This section covers how to store leftovers and what parts of the recipe you can prepare ahead of time.

Storage and Make Ahead

Store leftovers covered in the fridge for up to 4 days. The layers will soften a bit as it sits, especially the toffee, but it still eats really well straight from the fridge.

You can make this recipe ahead the night before. I actually prefer it that way because the pudding sets firmly and the whole trifle scoops cleaner.

If you want the top to stay crunchy, save a handful of toffee bits and sprinkle them on right before serving. The rest can go in the layers.

You can freeze individual portions, but the texture changes when it thaws (the cream layer can get a little weepy). If you do freeze it, thaw in the fridge overnight and give it a quick stir in the bowl before eating.

A few quick answers

This section covers a few extra details that may help before you head to the recipe card.

Recipe FAQs

Can I use store-bought brownies?

Yes. Store-bought brownies work great here, and it saves time. Just cut them into small cubes so you get a little brownie in every scoop.

Can I use homemade whipped cream instead of whipped topping?

You can. Use sweetened whipped cream and whip it to firm peaks so it holds up in the layers. If you’re making the trifle more than a day ahead, stabilized whipped cream is a better bet.

Can I swap the pudding flavor?

Definitely. Vanilla pudding makes the dessert a little lighter, and half chocolate/half vanilla is also really good. Just keep it instant pudding so it sets up properly.

Why did my trifle get watery?

This usually happens if the pudding wasn’t thickened enough, the milk wasn’t cold, or the brownies were still warm. Also, too much syrup in the middle layers can make things runny.

Do the toffee bits stay crunchy?

Some of the toffee will soften as it sits in the fridge, especially in the middle layers. If you want that crunch on top, add the final sprinkle of toffee right before serving.
